A French style direct fired oven. The ovens bake chamber has a 4' x 3' hearth. The transverse vault is 15 " high in the middle, descending to 8 3/4" at the sides. The Avaloir is in reclaimed brick, first layed in Outremont in the 1890's. Insulating fire brick and vermiculite concrete are employed as insulation. The oven will eventualy be covered with a weather canopy.
